Fresh Crab meat With Avocado Refresh with Red Capsicum Foam



I made this dish today (11/05/2008), the taste is good but still need to improve the texture of the red capsicum foam. The top layer is the red capsicum foam, then the avocado mousse, fresh crab meat, and chiffonade lettuce at the bottom. Unfortunately the picture didn't come out as nice as expected. 70/100......

2008 - A New Beginning



Looking forward to start my magnificent year, this year I will concentrate on Molecular Gastronomy creating simple but extraordinary dishes. Let's expect the unexpected!




Garden Salad/Salad Garden


I named this dish as a Salad Garden, because it looks like a mini garden. I pureed the olive to make it look like soil. The bubbles are lime air, I will improve this dish with liquid olive and liquid cheese. So stay tuned.
